National Hot Pastrami Sandwich Day


Ingredients
2 slices Rye Bread
1 tsp Mustard
Lettuce leaf

2 slices Tomatoes
oz Pastrami
1/2 oz Swiss Cheese

Directions
1. Top one slice of
 Rye Bread with mustard, lettuce, tomato, pastrami, and Swiss cheese.
2. Top with the second slice of rye bread.

3. Heat in oven or toaster oven until Swiss cheese melts.


Notes

The sandwich is high in saturated fat and sodium. Balance the rest of your day by choosing foods low in sodium and saturated fat. An educated consumer has the ability to make wise food choices.

Black Pepper-Curry Chicken Sauté

Black Pepper-Curry Chicken Sauté

Black pepper adds a subtle spiciness and enhances your body's absorption of turmeric in the curry. For the boldest flavor, use 1 teaspoon peppercorns. Serve with roasted cauliflower or broccoli for an extra boost.


Serves 4 (serving size: 
1/2 cup rice and 3/4 cup chicken mixture)

Ingredients

1 pound skinless, boneless chicken breasts, cut into 1-in. pieces
1/4 teaspoon freshly ground black pepper
1 tablespoon canola oil, divided
1 1/2 cups vertically sliced onion
2 teaspoons minced peeled fresh ginger
3 garlic cloves, minced
2 teaspoons curry powder
1 cup canned light coconut milk
2 teaspoons fresh lime juice
1/2 to 1 tsp. peppercorns, crushed
2 tablespoons chopped fresh cilantro or basil
2 cups hot cooked brown rice

Directions
1. Sprinkle chicken with 1/4 teaspoon ground pepper. Heat 1 1/2 teaspoons oil in a large nonstick skillet over medium-high.

2. Add chicken to pan; cook, stirring frequently, for 5 to 6 minutes or until chicken is lightly browned and almost cooked through. Remove chicken from pan.

3. Reduce heat to medium. Add remaining 1 1/2 teaspoons oil to pan; swirl to coat. Add onion; cook for 4 minutes or until tender, stirring occasionally. Add ginger and garlic; cook until softened, about 1 minute. Add curry powder; cook for 15 to 30 seconds or until fragrant, stirring constantly.

4. Stir in coconut milk, lime juice, and crushed peppercorns. Return chicken to pan. Cover, and cook over medium-low until sauce is slightly thickened and chicken is done about 5 minutes.

5. Remove from heat; stir in cilantro or basil. Serve over rice.

National Pierogi Day - Potato Pierogis

Pierogi are filled dumplings of East European origin. They are made by wrapping pockets of unleavened dough around a savory or sweet filling and cooking them in boiling water. These dumplings are popular in many Eastern European cuisines.

Pierogi are often semi-circular but triangular and rectangular ones are also found. Typically may be stuffed with mashed potatoes, fried onions, cheese, cabbage, sauerkraut, meat, mushrooms, spinach, or other ingredients depending on the cook's preferences. Dessert versions of the dumpling can be stuffed with cheese or with a fresh fruit filling, such as cherry, strawberry, raspberry, blueberry, peach, plum, or apple.




Potato Pierogis
4 servings

Ingredients
2 teaspoons extra-virgin olive oil, divided
1/2 cup finely chopped onion
1 cup cold mashed potatoes
1/2 cup grated reduced-fat Cheddar cheese, (2 ounces)
24 wonton wrappers, (about 6 ounces)
2 cups thinly sliced onions
1/4 cup reduced-fat sour cream

Directions
1. Heat 1 teaspoon oil in a nonstick skillet over medium heat; add chopped onion and cook, stirring, until softened, about 3 minutes.
2. Transfer to a bowl and mix in mashed potatoes and cheese.
3. Lay a wonton wrapper on a cutting board. (Keep remaining wrappers covered.) Cut wrapper into a circle with a 3-inch round cookie cutter, preferably serrated.
4. Place about 2 teaspoons potato filling just to one side of the center of the circle.
5. Moisten the edges with water, using a pastry brush. Fold wrapper over filling and press edges together to seal.
6. Flute the edge with the tines of a fork. (Be careful not to pierce the wrapper.)
7. Set the pierogi on a baking sheet and continue filling pierogis until the filling is used up. (Keep prepared pierogis covered with a damp cloth as you work.)
8. Put a large pot of water on to boil. Heat remaining 1 teaspoon oil in a large nonstick skillet over medium-low heat; add sliced onions and cook, stirring often, until tender and lightly caramelized, 10 to 20 minutes. (Reduce heat and/or add a little water, if necessary, to prevent scorching.) Set aside and keep warm.
9. Drop in about half the pierogis in boiling water. Cook until wrappers are tender and pierogis float to the top, 3 to 4 minutes. Retrieve the pierogis with a slotted spoon and place them in a pan with onions. Repeat with the remaining pierogis.
10. Place the pierogis and onions over medium-low heat and shake the pan to coat the pierogis with onions; warm through. Serve immediately with reduced-fat sour cream.

Monte Cristo Sandwich - Make it Light



Yield: 4 sandwiches
Serving Size: 1 sandwich

Ingredients
3 tablespoons honey mustard
8 (1-ounce) slices white bread
4 (1-ounce) slices Swiss cheese
4 (1-ounce) thinly sliced smoked ham
1/3 cup fat-free milk
2 large egg whites
Cooking spray
2 teaspoons powdered sugar


Directions
1. Spread 1 teaspoon honey mustard over each bread slice.
2. Place 1 oz swiss cheese slice on each of 4 bread slices.
3. Divide ham evenly over cheese.
4. Cover with the remaining 4 bread slices, mustard sides down.
5. Combine milk and egg whites in a shallow dish. Dip both sides of each sandwich into milk mixture.
6. Heat a large nonstick skillet coated with cooking spray over medium heat.
7. Cook sandwiches for 3 minutes on each side or until lightly browned.
8. Sprinkle each sandwich with 1/2 teaspoon powdered sugar.

August 13, National Filet Mignon Day - Nutrition Profile, Recipes and Food Safety

Filet mignon is a steak cut of beef taken from the smaller end of the tenderloin. In French, this cut can also be called filet de bœuf, which translates in English to beef fillet. When found on a menu in France, filet mignon generally refers to pork rather than beef.

Some butchers in the United States label all types of tenderloin steaks "filet mignon." In fact, the shape of the true filet mignon may be a deterrent when cooking, so most restaurants sell steaks from the wider end of the tenderloin - it is less expensive and much more presentable.

The tenderloin is the most tender cut of beef and is also the most desirable and therefore the most expensive. The average steer or heifer provides no more than 500 grams of filet mignon. Because the muscle is not weight-bearing, it contains less connective tissue, which makes it tender. However, it is generally not as flavorful as some other cuts of beef and is often wrapped in bacon to enhance flavor, and/or is served with a sauce.

Preparation
Filet mignon may be cut into 1- to 2-inch-thick portions, then grilled and served as-is. One also may find filet mignon in stores already cut into portions and wrapped with bacon. High heat is the usual method for cooking the filet mignon, either grilling, pan frying, broiling, or roasting. Traditionally in European and American restaurants, fillets are most often served in a cognac cream sauce, au poivre with peppercorns, or in a red wine reduction.

Bacon is often used in cooking filet mignon because of the low levels of fat found in the cut, as fillets have low levels of marbling, or intramuscular fat. Bacon is wrapped around the fillet and pinned closed with a wooden toothpick. This adds flavor and keeps the fillet from drying out during the cooking process.

Traditional cooking calls for the filet mignon to be seared on each side using intense heat for a short time and then transferred to a lower heat to cook the meat all the way through. Filet mignon is often served rarer than other meats. Those preferring a more well-done steak can request a "butterflied" filet, meaning that the meat is cut down the middle and opened up to expose more of it to heat during the cooking process. Cook to an internal temperature of at least 145° F.

Avocados offer nearly 20 vitamins and minerals in every serving, including potassium (which helps control blood pressure), lutein (which is good for your eyes), and folate (which is crucial for cell repair and during pregnancy).

Avocados are a good source of B vitamins, which help you fight off disease and infection. They also give you vitamins C and E, plus natural plant chemicals that may help prevent cancer.



Avocados are low in sugar. And they contain fiber, which helps you feel full longer. In one study, people who added a fresh avocado half to their lunch were less interested in eating during the next three hours.

Fat and Calories

Avocados are high in fat. But it's monounsaturated fat, which is a "good" fat that helps lower bad cholesterol, as long as you eat them in moderation. 

Avocados have a lot of calories. The recommended serving size is smaller than you’d expect: 1/5 of a medium avocado (or 1 ounce) is 50 calories.

How to Prepare Avocados

Store avocados at room temperature, keeping in mind that they can take 4 to 5 days to ripen. To speed up the ripening process, put them in a paper bag along with an apple or banana. When the outside skins are black or dark purple and yield to gentle pressure, they’re ready to eat or refrigerate.

National Daiquiri Day - Frozen Watermelon Strawberry Daiquiri


Frozen Watermelon Strawberry Daiquiri 


Yields: 4 servings
Serving Size: 8 ounces

Ingredients.
3 cups frozen watermelon chunks
1 cup sliced fresh strawberries
1/2 cup rum (can be omitted or reduced to taste)
Juice of 1 lime
3 tablespoons agave syrup
Ice if needed
Watermelon wedges for decoration

Directions.
1. Combine all ingredients in a blender, process until smooth. If you like your cocktails thick and slushy, add ice to get the right consistency. If you prefer your cocktail less slushy, skip the ice.

2. Garnish with watermelon wedges and enjoy!

World Tuna Day



Tuna is a saltwater fish that belongs to the mackerel family (Scombridae). Tuna is one of the only species of fish that can maintain a body temperature higher than that of the surrounding water.

Fish are a high-quality protein source, and lower mercury fish are a good choice for everyone. This advice is specifically for women who are pregnant, might become pregnant or are breastfeeding, and for young children, but everyone can follow this advice.

Albacore has more omega-3 fat per ounce but since it comes from a larger species of tuna, it also has more mercury. Chunk light, on the other hand, comes from a smaller species of fish and has less mercury and omega-3 fat.

The Food and Drug Administration and EPA recommend that women who may become pregnant, pregnant women, nursing moms and young children eat up to 12 ounces (2 average meals) of lower-mercury fish and shellfish each week. Since albacore ("white") tuna has more mercury than light tuna, when choosing your 2 fish, you can safely eat up to 6 ounces of albacore tuna each week (which is a healthy serving of tuna for one average meal).

Serves 6

Ingredients.
1/2 cup diced Red Onion
1/3 cup low-fat mayonnaise
Freshly Ground Pepper To Taste
6-ounce, 2 cans chunk light tuna in olive oil, water-packed
2 Celery, stalks, thinly sliced
1/4 cup Packed coarsely chopped fresh tarragon leaves
8 cups Torn lettuce, or mixed greens


Directions.

1. Place onion in a small bowl and cover with cold water. Refrigerate for 20 minutes. Drain.

2. Whisk mayonnaise and pepper in a medium bowl. Add tuna, celery, tarragon, and onion; stir to combine. Serve on top of the lettuce (or mixed greens) with tomato and lemon wedges.

Many people believe if they just buy a nutrient analysis program, they can provide an accurate nutrition analysis. This is far from the truth.

Recipes are usually written based on what the consumer needs to purchase. The individual analyzing the recipe must evaluate the recipe based on the actual food ready to eat (unless the food is meant to be eaten whole.)

A nutrient analysis program cannot cook or prepare meals. A person must have skills in Food Science, Culinary Nutrition, Cooking and Preparation Techniques, Purchasing Guides, Yield Factors, and Nutrient Analysis Software.


An essential tool for analysis is food conversion and equivalent tables. These databases provide information on AP (as purchased), EP (edible portion), waste, marinating, straining, percentage of bones, the difference between raw or cooked weight, and comparison of weight versus volume measures. Many nutrient analysis software programs do not provide this information for all items; therefore it must be calculated manually or estimated. 


Most Americans believe one cup is equal to eight ounces, and they would be right if we were referring to a liquid. In selecting the correct measure of food, it is critical to know whether the food is measured by weight or by volume. Weight measures include grams, ounces, and pounds. Volume measures are listed as teaspoons, tablespoons, fluid ounces, cups, pints, quarts, and gallons.

Below is the nutrition analysis from Allrecipes compared to our Review. Both companies used the same database. The results show a significant difference.

Procedures.
1. Repeat Dietitians-Online's analysis. Look for errors. 
2. Duplicate the author’s numbers, if possible. 

Results.
1. Results were 
duplicated related to the author’s failure to drain and strain the beans.
2. The recipe called for a 16 oz can black beans, drained and strained. Produced 12.5 ounces black beans and significant less sodium.
3. The nutrition analysis should be based on the Edible Portion of foods; not As Purchased (unless eaten whole).

The Homemade Black Bean Veggie Burgers can fit into the following food plans with the help of a registered dietitian: low calorie, low fat, sodium restricted, and high fiber. Good source of vitamin C and A.
